1lb shrimp
1 tablespoon Grape Seed Oil
1 large onion
6 garlic cloves, minced
1 1/2 teaspoon salt
1 teaspoon pepper
1 teaspoon turmeric
6 cups chicken broth, low sodium
2 carrots, sliced
1lb Shitake Mushrooms, stems removed and sliced into small pieces
6 baby bok choy, bottoms chopped off
Onion
Directions: Heat oil in stock pot, add onions and garlic, saute for 5 minutes or until translucent. Add in salt, pepper, turmeric, chicken broth, carrots and mushrooms
bring to a boil. Reduce heat, cover, and let simmer for 20 minutes. Add Bok choy and Shrimp for last 5 minutes. This makes a lot, so I actually store some in mason jars
then I put it in my freezer for later.
